Have you ever asked yourself if there is a good way to preserve cherry tomatoes?
We currently have quite a problem on the homestead, a really nice problem in fact. Our tomatoes are teeming with cherry tomatoes, some red ones, but mainly the lovely Golden Girl ones. The are mouth magic. You pop one (or forty) in your mouth and all is right in the world. When we are working in the garden and I need a pick me up, I throw one in my mouth. They are quite simply delightful, in every possible way.
But as I said, we have a problem. We have more of them than we can eat before they spoil. We eat tomato, basil, and mozzarella salad almost every day, yet still the little darlings outnumber us. So we’re left with the question of whether or not there is a good way to preserve this bounty? We suspect that they wouldn’t be the best choice for tomato sauces and such, but then we wondered how they would taste dehydrated. Kind of like our own version of sun dried tomatoes.
So a couple of weeks ago I sliced a ton of them in half and loaded up the dehydrator trays with them and then we waited about 24 hours while they dried.
After the moon had time to make a complete orbit we were ready to give them a try.
They are amazing. Simply amazing. They make us happy. They are good in salad, I’m planning to liberally throw them all over a zucchini crust pizza later this week, and they are great on their own. I may or may not have popped them like candy a few times the first day whenever I walked past the jar in the kitchen.
HOW TO PRESERVE CHERRY TOMATOES
Here’s how I dehydrated our cherry tomatoes…
- Sliced the cherry tomatoes all in half.
- Laid them out cut side up on the dehydrator trays leaving a bit of a gap between them for air flow.
- Set the dehydrator to the fruit setting (135 degrees Fahrenheit).
- Let the dehydrator run for about 20-24 hours, until the cherry tomatoes reach a good level of dryness.
- Stored them in a Mason jar for use in salads, etc.
So if you have this problem too, give dehydrated cherry tomatoes a try. I think you’ll love them!
